Lime & Lemon Juice

Lime Puree

Although squeezing limes and lemons fresh per cocktail is preferred, using 100% citrus juice can save a lot of time when preparing for an event.

As such, we recommend purchasing Funkin Pure Pour lime and lemon juices, which can be purchased directly from Funkin, Amazon or Drink Supermarket. These are sold in 1kg pouches, or in packs of 5 x 1kg pouches.

Fruit Purees

As with the citrus juices above, you can also purchase fruit purees from Funkin, in 1kg pouches from the suppliers above. However, if you prefer to make the purees yourself, follow the below recipe:

Strawberry Puree (makes 1 litre / 1kg)

Drain 5 cans of tinned strawberries and add the fruit to a blender. Blend on high speed for a few minutes until completely smooth. Pour into a suitable container and refrigerate. Keeps for two days.

For other fruits, simply adjust the tinned fruit. This won’t work for passion fruit, apple, or peach. We recommend using Funkin for these.

Sugar Syrup

This can also be purchased from the above websites (Funkin sells this for ¬£4.50) however it’s incredibly easy to make:

Sugar Syrup (makes 1 litre)

Pour two mugs of sugar into a saucepan, and add one mug of boiling water. Gently heat, and stir until the liquid is completely clear. Keep the heat on for another 5 minutes (this eliminates crystallisation) then pour contents into a heatproof bottle and refrigerate. Keeps for 30 days.

For flavoured syrups, flavour the water first before adding the sugar. In order to make ginger tea syrup, make a mug of strong ginger tea then use this water to make the sugar syrup. For vanilla syrup, split and scrape a vanilla pod and add to the sugar syrup. Leave the pod in too when bottling for an intense flavour.
